InstructionsMelt butter in a good-sized saucepan and blend in flour; off heat gradually stir in milk; add salt and pepper to taste. Chop whites of hard cooked eggs very fine; mash yolks. Stir chopped egg whites and the Terrapin into white sauce, add mashed yolks, and simmer for 5 minutes. Stir in cream as soup cooks for 5 minutes more. Blend in Sherry; dust each bowl with cayenne before serving. |
