InstructionsWipe the inside of the chicken with a damp cloth. Mashed two of the cloves of garlic and blend with the 1/4 pound of butter. Let this garlic butter stand 30 minutes. Meanwhile, finely chop the remaining 2 cloves of garlic and sprinkle them inside the cavity of the chicken. Add the parsley and the 2 tablespoons of butter and close the vent with foil. Truss the chicken well. Melt the garlic butter and add the lemon juice and salt and pepper. Roast the chicken on a spit, basting frequently with the melted butter mixture. |
