Apple Muffins

Ingredients

1cupall-purpose flour
1cupwhole wheat flour
1⁄3cupwheat germ
1⁄4cupbrown sugar (firmly packed)
1teaspoonbaking powder
1teaspoonbaking soda
1⁄4teaspoonsalt
1teaspoonground cinnamon
1⁄4teaspoonground nutmeg
2 eggs (beaten)
1⁄4cupskim milk
1⁄4cupvegetable oil
2cupapple (peeled and shredded)
1tablespoonlemon rind (grated)
  vegetable cooking spray

Instructions

Combine flours, wheat germ, brown sugar, baking powder, soda, salt, cinnamon, and nutmeg in a large bowl; make a well in center of mixture. Combine eggs, milk, and oil; add to dry ingredients, stirring just until moistened. Stir in apple and lemon rind.

Spoon into muffin pans coated with cooking spray, filling two-thirds full. Bake at 400F for 10 to 12 minutes.
