Bacon and Peanut-Butter Muffins

Ingredients

2cupflour (sifted)
1tablespoonbaking powder
2tablespoonsugar
1teaspoonsalt
2tablespoonbacon fat (melted - or butter)
1 egg (beaten)
1cupmilk
3 bacon strips (uncooked, finely chopped)
1⁄4cuppeanut butter

Instructions

Heat oven to 400F.

Sift flour, baking powder, sugar and salt together. Blend melted fat, well-beaten egg, milk, and finely chopped bacon, then stir in flour mixture, but do not beat; mixture should be just moistened. Pour a little batter into each well-greased muffin tin, then drop in about 1/3 teaspoon of peanut butter before filling tins three-fourths full. Bake for 20 to 25 minutes.

Personally, I believe this recipe works much better if you pre-cook the bacon and crumble it into the mixture.
