Bananas with Rum

1⁄2cupwhite sugar
1⁄2cupbrown sugar
2slicelemon with rind (halved)
4sliceorange with rind (halved)
1teaspoonrum extract
6largeripe bananas
2ouncejamaica rum (or a dark rum of your preference)


Boil water with sugars and fruit until a syrup forms, one that will glaze a spoon. Add extract. Split bananas in half lengthwise and sauté in butter. Spoon sauce over bananas and sprinkle a teaspoon of rum over each half of the banana.
