Sweet Potato Casserole

3poundsweet potatoes (about 4 cups mashed)
1⁄4cupbrown sugar
1⁄2teaspoonmace or nutmeg
1cupminiature marshmallows


To prepare the potatoes, wash, remove the bad spots, quarter, cover with water, simmer (20 minutes or until tender), drain, and peel.

Heat the oven to 350°F. If the potatoes are soft and moist, stir them up. If they seem to be firm and dry, puree them in a food processor.

To 4 cups of mashed sweet potato add the sugar, butter, salt, mace, and cinnamon, and mix well. Scrape into a medium-size casserole dish and bake 25 minutes. Remove from the oven, spread the marshmallows over the top, and broil about 1 minute or until the marshmallows puff up and brown.
