Baked Swordfish Steak

2poundswordfish, 1 inch thick
  salt and pepper
1⁄4cupdry sherry
1dashcayenne pepper
1 1⁄2cupsour cream
1cupsharp cheddar cheese (grated)
  parsley (for garnish)


Heat the oven to 425°F. Wipe steaks; sprinkle with salt and pepper and arrange them in a buttered baking dish. Mix sherry, cayenne, sour cream, and paprika, then spoon it onto the steaks. Scatter grated cheese on top and bake for 10 minutes or until done. Serve steaks smothered in sauce, garnished with snips of parsley.
