Barbecued Buffalo Sandwiches

Ingredients

2poundground buffalo
1mediumonion (chopped)
14ounceketchup
1⁄2cupwater
1⁄4cupcelery (chopped)
2tablespoonlemon juice
1tablespoonbrown sugar
1⁄2tablespoonworcestershire sauce
1⁄2tablespoonsalt
1teaspoonvinegar
1⁄4teaspoondry mustard

Instructions

In a heavy skillet cook the buffalo and onion, stirring often until the buffalo is brown and tender. Stir in the ketchup, water, celery, lemon juice, brown sugar, Worcestershire sauce, salt, vinegar, and dry mustard, and heat to boiling. Reduce the heat, and simmer covered for 30 minutes. Serve on toasted wheat buns.
