16 cherry tomatoes
1⁄2poundapple-smoked bacon (cooked and crumbled)
1⁄3cupgreen onions (white and green parts minced)
2tablespoonromaine lettuce (minced)


Cut a thin slice off the stem end of each tomato, and scoop out and discard the pulp. Drain the tomatoes, cut side down, on absorbent paper for 10 minutes.

Meanwhile, combine the remaining ingredients in a small bowl and stir gently to mix well. Spoon this mixture into the tomatoes. Refrigerate, covered, for at least 1 hour, but not overnight, and serve chilled.


Preparation time does not include refrigeration time.
