Cinnamon-Sugar Applesauce Muffins

1⁄2cupbutter or margarine (softened)
3⁄4cupsugar (divided)
2 eggs
1 3⁄4cupall-purpose flour
2teaspoonbaking powder
1⁄4cupmargarine or butter (melted)
1⁄4teaspoonground cinnamon


Cream 1/2 cup butter; gradually add 1/2 cup sugar, beating until light and fluffy. Add eggs, one at a time, beating well after each addition. Stir in applesauce. Combine flour, baking powder, and salt; add to creamed mixture, and stir just until moistened.

Spoon batter into greased 1-3/4 inch miniature muffin pans, filling half full. Bake at 425F for 15 minutes or until done. Remove from pan immediately, and brush muffin tops with melted butter. Combine remaining 1/4 cup sugar and cinnamon; sprinkle sugar mixture over each muffin.
