Cream of Crab Soup

Ingredients

3tablespoonbutter
1 onion (finely chopped)
3 celery stalks (finely chopped)
3 mushrooms (finely chopped)
1 1⁄2tablespoonflour
1teaspoonsalt
1⁄8teaspoonpepper
2cupchicken stock
1 1⁄4cupcrab meat
3cupmilk
1cupheavy cream

Instructions

Melt butter, add onion, celery and mushrooms, and cook 5 minutes without browning. Blend the flour and seasonings with the stock, and add with crab meat to the vegetables. Simmer 30 minutes. Combine milk and cream, salt, and add to soup. Let stand 5 minutes before serving.
