Curry Sauce (Tahiti)

Ingredients

1tablespooncurry powder
1tablespoonbutter
1mediumonion (chopped)
2 celery stalks (chopped)
1⁄2cupmushrooms (sliced)
1cupapple (diced and peeled)
1⁄2cupchicken broth
1quarthalf-and-half
4tablespooncornstarch
1⁄2cupcold water
  salt and/or msg (to taste)

Instructions

Sauté curry powder in butter, being careful not to let it scorch; add vegetables and Apple and mix thoroughly. Add stock and let it simmer for a few moments, until ingredients are tender but not overcooked. Add half-and-half and bring just to a boil. Thickened with cornstarch mixed with water, stirring constantly until mixture thickens. Season to taste.
