Ingredients

2cupmashed potatoes (unseasoned)
1ouncesmall onion (minced)
1⁄2cupfresh bread crumbs
2 eggs
2 1⁄2teaspoonsalt (divided)
1⁄4teaspoonblack pepper (divided)
1 1⁄4poundground chuck
1⁄2poundground smoked ham
1⁄2cupcondensed cream-of-mushroom soup

Instructions

When it's convenient: Prepare mashed potatoes, prepare minced onion and bread crumbs. About 1 1/2 hours before serving: Start heating oven to 350F. With fork, beat 1 egg; stir in soup, 1 teaspoon salt, 1/8 teaspoon pepper and potatoes. Then, with fork, slightly beat 1 egg; lightly mix in chuck, then ham, remaining salt and pepper, onion and bread crumbs. On waxed paper, pat meat into a 14" x 10" rectangle. Place potato mixture crosswise across center of meat; roll meat around potato stuffing using wax paper to support. Place roll in shallow baking dish, with seam side down; lightly score top. Bake 75 minutes. With 2 broad spatulas, lift loaf onto platter to serve.
