2cupdried apples
2 eggs
1teaspoonground cloves
1teaspoonground cassia (i.e. cinnamon)
1teaspoonground ginger
1teaspoonsoda (i.e. baking soda)
3 1⁄2cupflour

Soak the apples overnight in cold water; then chopped fine. Add them to the molasses and simmer slowly 1 hour. Cream the butter and sugar, add beaten eggs and mixed and sifted dry ingredients. Add the apple molasses mixture. Pour into a greased cake tin and bake.

Older recipes and cookbooks tend not to give times or temperatures for baking. In this case it is up to the cook. We suggest about 30 minutes at a temperature of 350°F; if it isn't ready by then, check on your cake by inserting in the middle of it a toothpick or thin-bladed knife every 5 minutes after that. When the knife or toothpick are removed from the cake cleanly (nothing stuck to it), then the cake is ready.
