Favorite Grilled Chicken

8 chicken wings (or one chicken cut into 8 portions)
3tablespoontomato paste
3tablespoonbrown fruity sauce (see notes below)
1tablespoonwhite wine vinegar
1tablespoonolive oil
1clovegarlic (crushed – optional)
  salad greens (to serve)


Remove the skin from the chicken if you want to reduce the fat in the dish.

To make the barbecue glaze, place the tomato paste, brown fruity sauce, white wine vinegar, honey, oil, and garlic in a small bowl. Stir all the ingredients together until they are thoroughly blended.

Brush the grill glaze over the chicken and grill over hot coals for 15 to 20 minutes. Turn the chicken portions over occasionally and baste frequently with the grill glaze. If the chicken begins to black and before it is cooked, raise the rack if possible or move the chicken to a cooler part of the grill to slow down the cooking.

Transfer the grilled chicken to use warmed serving plates and serve with fresh salad leaves.


For the "fruity sauce", you can use something like Apple butter, a dark marmalade or other fruit sauce or jam heated.
