Lima-Bacon Bake

20ouncefordhook lima beans (fresh or frozen)
8slicebacon (diced)
1cuponion (chopped)
1⁄2cupcelery (chopped)
1 1⁄2cupmonterey jack cheese (or mild cheddar cheese - shredded)
1dashworcestershire sauce


Cook lima beans in 1-1/2 cups boiling salted water 15 minutes; drain, reserving 1/2 cup of cooking liquid. In a skillet, fry diced bacon until about half cooked. With a slotted spoon, remove bacon to paper towels to drain; discard all but 3 tablespoons of the fat. Cook onion and celery in bacon fat until softened. Toss together lima beans, onion, celery, cheese, pepper, Worcestershire sauce and reserved cooking liquid. Turn into a lightly greased 2-quart casserole. Sprinkle top with the bacon. Bake uncovered in a 350F oven about 25 minutes or until the top is browned.
