1quartorange sherbet (softened)
2tablespoonlemon juice
2teaspoonlemon peel (grated)
3⁄4cupdry sherry (chilled)
1cupwhipping cream (whipped)
  orange segments
  mint leaves


Beat sherbet, lemon juice and peel in medium-size bowl until creamy; gradually beat in sherry. Pour or spoon into chilled stemmed glasses. Place in freezer (for 2 hours).

Transfer glasses from freezer to refrigerator when serving main course to allow ices to soften slightly (about 30 to 60 minutes).

Garnish with whipped cream, orange segments and mint leaves. Serve with straws.


Preparation time does not include chilling time.
