Oven Poached Haddock

Ingredients

2poundhaddock (cut into 6 servings)
3 tomatoes (sliced)
1 lemon (juiced)
1teaspoonparsley (chopped)
1pinchthyme
1 bay leaf
1⁄2teaspoonsugar
1tablespoononion (minced)
  salt and pepper (to taste)

Instructions

Mix all but the tomatoes and fish. Marinate the fish in the mixture for 3 or 4 hours in refrigerator. Place the fish in a baking dish and pour marinade over it. Cover the tomato slices. Salt and pepper lightly and place in preheated oven at 350F for 40 minutes.

Preparation time does not include marinating time.
