Parsley Dressing

Ingredients

2cupparsley (minced)
1⁄4cupbasil (minced)
3clovegarlic (minced)
1⁄4cupanchovies (chopped – about 1 small can with oil)
1⁄4cuppimiento (chopped)
3tablespooncapers
3tablespoonolive oil
2tablespoonwine vinegar
  pepper (to taste)

Instructions

Mix all ingredients thoroughly and let stand for at least 4 hours, serve as a garnish with hot or cold fish.

Notes

Will keep refrigerated for about 2 weeks.
