Pepperoni Pizza Popovers

2 eggs
1tablespoonolive oil (or vegetable oil)
1cupall-purpose flour
1⁄2teaspoondried basil (crushed)
1⁄4teaspoondried oregano (crushed)
1⁄8teaspoongarlic powder
2tablespoonfinely snipped pepperoni
1cupprovolone cheese (or mozzarella cheese - shredded)
  shortening or nonstick spray for pan


Grease popover pan (or other type - see below).

In a medium mixing bowl use a wire whisk or rotary beater to beat eggs, milk, and oil together till combined. Add flour, basil, oregano, and garlic powder. Beat till well combined. Stir in pepperoni.

Fill the prepared pans or cups half full with batter. Bake in a 400F oven about 20 minutes or till done.

Sprinkle cheese on top of popovers. the return the popovers to the oven about 5 minutes or till cheese is melted. Remove popovers from pans or cups and serve immediately.


If you do not have a popover pan, you can also use: eight 4-inch Yorkshire pudding pans, 4-1/4 inch pie pans, 4-1/2 inch quiche dishes, or 10-ounce custard cups.
