Pilgrim Pumpkin Pie

Ingredients

1 3⁄4cuppumpkin purée
3⁄4cupbrown sugar (firmly packed)
3⁄4teaspoonsalt
1teaspooncinnamon
1⁄2teaspoonginger
1⁄2teaspoonnutmeg
1cupevaporated milk
1⁄2cupwater
2 eggs (well beaten)
1 pie crust (unbaked)

Instructions

Line a pie dish with pastry and chill for several hours.

Heat pumpkin over low heat for 10 minutes, stirring often, to dry out slightly. Heat oven to 450F. Combine sugar, next four ingredients. Stir into pumpkin. Stir milk, water, pumpkin mixture, into eggs. Strain through a fine strainer. Pour most of it into shell. Place on oven rack, add rest of filling. Bake at 450F for 15 minutes; reduce heat to 300F; bake 45 minutes, or until silver knife inserted into center come out clean. Cool on rack.
