Rice Pudding

Ingredients

3cupwater
1cupshort grain rice
4cupmilk
2⁄3cupsugar
1teaspoonvanilla
1⁄8teaspoonlemon extract

Instructions

Bring the water to boil and add rice. Parboil for 5 minutes. Drain rice in sieve. Combine milk, add sugar in saucepan. Bring to boil. Add drained rice. Reduce heat and simmer partially covered 30 to 35 minutes, stirring occasionally. When mixture is still creamy and rice is tender, remove from heat. Stir in vanilla and lemon extract. Let cool to room temperature then refrigerate until well chilled.
