Ingredients

4teaspoondry mustard
1⁄2cupsherry
1⁄4cupsoy sauce
2cupapricot jam
1teaspooncloves
1teaspoonfennel
1teaspoonaniseed
1teaspooncinnamon
1poundspareribs (per person)

Instructions

Combine the mustard, sherry, soy sauce, and apricot jam and blend well. Add the cloves, fennel, aniseed, and cinnamon. Coat the spareribs well with this mixture and let them stand for an hour. Weave them on the spit and roast over a slow fire for an hour to an hour and a half, brushing them occasionally with the marinade.
