Sausage in Vinegar Sauce

1⁄4cupextra-virgin olive oil
1 onion (thinly sliced)
1⁄2poundmild italian sausage (cut into 1/2-inch thick coins)
3tablespoonwhite wine vinegar
  salt and ground black pepper (to taste)


Heat the olive oil in a 12" skillet over medium heat. Add the onion; cook 10 minutes. Add the sausage and cook 10 minutes, or until browned on both sides, turning once. Pour in the vinegar; cook until it evaporates, 2 minutes. Season with salt and pepper. Serve hot, with grilled polenta.
