InstructionsCombine apricots and brandy in small bowl; let stand covered 15 minutes. Heat butter and oil in 9-inch skillet over high heat; add green pepper, onions and garlic. Cook, stirring constantly, 3 minutes. Add shrimps. Cook, stirring constantly, 2 minutes. Add apricot mixture. Cook, stirring constantly, 2 minutes. Mix lemon juice, soy sauce, cornstarch and pepper in small bowl; stir into shrimp mixture. Cook, stirring constantly, until thickened, about 2 minutes. Serve over rice; sprinkle with almonds. |
