Spice Cookies (Speculaas)

Ingredients

3⁄4cupsoftened butter (or margarine)
2cupdark brown sugar (packed)
2 eggs
1⁄3cupmolasses
3tablespooncognac
2teaspooncider vinegar
3 1⁄2cupall-purpose flour
2tablespoonground cinnamon
2teaspoonground cardamom
2teaspoonground nutmeg
2teaspoonsalt
1 1⁄2teaspoonbaking soda
1⁄4teaspoonground cloves

Instructions

Heat oven to 375°F.

Cream butter and sugar in large mixer bowl until light and fluffy, about 3 minutes. Add eggs; beat 2 minutes. Add molasses, cognac and vinegar; beat until well mixed, about 3 minutes.

Combine remaining ingredients in medium-size bowl. Gradually beat into butter mixture until well mixed, about 4 minutes.

Fit cookie press with bar plate according to manufacturer's directions. Fill press with dough. Press dough onto greased baking sheet into 3-inch-long bars. Press second layer of dough over first. Bake until cookies are brown and edges are crisp, about 12 minutes. Cool on wire racks. Repeat with remaining dough.
