Spicy Chicken Salad with Mushrooms

1⁄2teaspoonblack pepper
3⁄4teaspoonfresh thyme
1 chicken breast (uncooked - skinned and cut into strips)
2tablespoonvegetable oil
4cuplettuce (or other salad greens - torn)
1cupmushrooms (sliced)


In a small bowl, mix the spices together. Toss the chicken in the spices, until chicken is well coated.

In a skillet, heat the oil, saute the chicken until brown all over. Drain well on paper towels and refrigerate the chicken until ready to serve.

In a salad bowl, toss the greens, mushrooms, pecans, oranges and chicken. Serve with a favorite dressing.
