Strawberry Atole (Atole de Fresa)

Ingredients

1 1⁄2quartfresh strawberries
1cupflour
1pintwater
1quartmilk (scalded)
1cupsugar
1teaspoonvanilla
1cupcream
  a few drops red food coloring (optional)

Instructions

Wash strawberries well and press through colander or sieve to extract juice. Blend flour with water and add, while stirring, to scalded milk. Add sugar and cook, stirring constantly, until thickened, about 10 minutes. Add strawberry juice, vanilla, cream and coloring. Heat, stirring, to boiling. Serve hot.
