Strawberry Muffins

2cupstrawberries (quartered)
1 1⁄4cupsugar (divided)
1 1⁄2cupall-purpose flour
1⁄2teaspoonbaking soda
2 eggs (beaten)
1teaspoonvanilla extract
3⁄4cupwalnuts (chopped)


In a medium bowl toss the berries with 1/4 cup sugar and let stand at room temperature for 1 hour. In a large bowl combine the flour, baking soda, and spices. In a separate bowl mix the beaten eggs and oil, add 1 cup sugar, and beat. Add the berries, vanilla, and nuts to the egg mixture and gently stir. Fold this mixture into the dry ingredients. Fill muffin cups 3/4 full. Bake in a 350F oven for about 25 minutes. Best made ahead, even frozen and served cold.
