Sweet and Sour Cucumber Salad

2largecucumbers (peeled and sliced paper thin)
1⁄2cupred wine vinegar
1 1⁄2tablespoonsugar
1⁄4cupsalad oil
1⁄4cuponion (chopped)
1⁄4cupparsley (chopped)
  salt and ground black pepper (to taste)


Put the cucumbers in a serving bowl. Combine the remaining ingredients and pour them over the cucumbers. Let chill for at least an hour or two. In fact, it can be made the day before you use it.


Preparation time does not include chilling time.
