Tortillas Stuffed with Cheese (Quesadillas)

12 flour tortillas
1 red or green sweet pepper (chopped)
2 tomatoes (peeled and chopped)
1clovegarlic (minced)
4 green onions with tops (chopped)
1tablespoonchili powder
12sliceamerican or cheddar cheese (chopped coarsely)
1smallonion (minced)
2 avocados (very ripe and the sliced)


For the filling: combine all ingredients except the shortening, cheese, tortillas, onion, and avocados, and sauté in about a tablespoon of shortening. Let simmer until thickened. Cook the mixture and add the cheese. Mix well. Heat tortillas to soften them and put a generous dab the filling on each one. Fold over once, fasten with toothpicks, and fry in deep hot shortening until Golden Brown. Garnish with minced onion and avocado slices.


You can also use vegetable oil in place of shortening.
