Turkey with Broccoli and Cheese

1poundbroccoli (cooked)
8sliceturkey breast (cooked)
1⁄2cupchicken stock
1tablespoonarrowroot starch
1⁄2cupheavy cream
1cuphollandaise sauce
1⁄2cupvermont cheese (grated)
1⁄4cupbread crumbs


Break up broccoli in individual buds. Butter a shallow baking dish, cover the bottom with turkey slices, and top them with broccoli. Heat milk, stock, and 1 tablespoon butter. Mix arrowroot with cream and stir this paste into hot milk mixture; cook slowly until sauce thickens, stirring constantly. Off the heat, stir hollandaise into the cream sauce, blend well, and pour over broccoli and turkey. Sprinkle with bread crumbs and cheese. Bake for about 15 minutes.
