2 t-bone or porterhouse steaks (cut at least 1-1/4 inches thick)
3tablespoonolive oil
1⁄8teaspoonground black pepper
  lemon wedges


Rub steaks with oil and pepper and let stand at room temperature 1 hour. Pan-broil according to basic recipe. Serve with lemon wedges.
